美国能源部劳伦斯伯克利国家实验室(伯克利实验室)和加州大学伯克利分校的研究人员发现,摄入含有铜的饮食可有助于机体脂肪的消耗。 

加州大学伯克利分校的Christopher J. Chang教授发现,金属在脂肪新陈代谢中起着重要的作用。他们认为,铜在脂肪分解过程中充当内源性调节器的角色。这对脂肪细胞的分解是至关重要的,且有助于机体的新陈代谢和能源的利用。

铜对人体确实是必要的,但是机体自身无法产生铜物质,只能从外界获取,富含铜的食物包括绿叶蔬菜、蘑菇、种子、坚果、豆类以及牡蛎和其他甲壳类动物等。因为机体不可以产生铜,所以我们必须从外界获取,但是典型的美国饮食不包括丰富的绿叶蔬菜。亚洲式饮食中铜的含量较丰富。

Chand博士和同事试图通过研究Wilson病小鼠以探究铜和脂肪消耗之间的关系。Wilson病又称肝豆状核变性,本病于1911年首先由Wilson报道,此为一种常染色体隐性遗传性疾病,是先天性铜代谢障碍性疾病。临床上以肝损害、锥体外系症状与角膜色素环等为主要表现。 

分析显示,相比对照组小鼠而言,实验组小鼠体内的铜出现了过度沉积。研究人员还发现,实验组小鼠的白色脂肪组织(WAT)或白色脂肪含量低于对照组。 

Chang博士和同事发现,畜牧业中牛饲料中铜的含量与牛肉脂肪有关。也就是说牛饲料中铜水平影响牛肉质量。这对畜牧业有重要影响,但研究人员表示仍需进行更进一步的研究。研究发表在Nature Chemical Biology。
